What a digital batch record captures

The same content as paper, structured: formula and revision, each ingredient's lot and quantity (scanned or scale-fed, not transcribed), process steps with actual times and temps (from the PLCs where possible), in-process checks with pass/fail, deviations with dispositions, and sign-offs. Every element timestamped and tied to the batch, which is what makes it queryable later.

The deviation that gets caught in-shift

The payoff moment: an operator records a mix time short of spec, or a kettle temp streams in low, and the system flags it immediately, while the batch is still in the building, often still in the process. On paper that deviation would be discovered at QA review tomorrow, after packaging, sometimes after shipping. Catching it in-shift converts a potential recall into a rework decision.

Trace and audit, solved as a side effect

Because every ingredient lot is captured at use, the batch record builds the genealogy automatically: one-up, one-back in seconds, with the record attached. Switching without disrupting production

The pattern that works in live food plants: pick one line, mirror the existing paper batch sheet on station tablets (same fields, same order, faster entry), run both for two weeks, then retire paper. Connect kettles, ovens, and fillers as a second pass so temps and times stream instead of being written.
